April’s honey is from the blossoms of Big Leaf Maple and Red Currants. The flavor is complex, like a delicious vanilla caramel with a buttery salty finish.
Early May’s lovely honey is full of butterscotch, lemon, plum and cherries, primarily from the blooming crimson clover, camassia and Hawthorne trees.
Late May - Strong flavors of marionberry, raspberry and blueberries.
